Cooking with kids doesn’t have to be complicated, in fact these Easy Homemade Pizza Pockets are just about as simple as it gets! After making this recipe again and again in my own home, you can bet it is kid-tested and approved.
My grandkids and I love making this recipe because each child can create their own, and we can all spend time together as we make them. Get ready for some laughs, some conversation and a quick dinner all at the same time – a triple crown winner! Plus with my formal training in nutrition, food science, and family studies, the recipe is designed for kids to follow along and enjoy the process!
One of the things we all love about this activity is that each child can make their own pizza pockets and we can all work at making them at the same time. That makes for some laughs, some time for conversation and supper getting made- a triple crown winner.
Pizza Pocket Recipe Ingredients
The only thing that trips me up is remembering to set the frozen rolls out to thaw in advance. They don’t have to sit long enough to double in bulk as it says on the wrapper but they should be soft and pliable.
I like the Rhodes brand frozen rolls but I’m sure other brands could work. You can make homemade dough if you want. I usually take the shortcut of the frozen rolls- it is fondly called speed scratch cooking.
Well, last week I remembered to set the dough out, woo-hoo! After hair was tied back and hands were washed, three eager grands made short work of making their pizza pockets and then proceeded to make more for the grown-ups.
How to Make Pizza Pockets
It takes two of the frozen rolls to make one pizza pocket. Press the two rolls together, one on top of the other. Then lay them down on the table top and press them out into a round that is about 5 inches in diameter. Tip: Don’t use extra flour on this step. The dough needs to stick to the counter just a bit. If you add flour and they spring back and it’s next to impossible to press out the dough.
2. The ingredients for the Easy Pizza Pocket Recipe for Kids can be set on the center of the table so that all little cooks can reach them…even you.
3. Spoon a Tablespoon or two of Pizza Sauce onto the center of the dough but don’t spread it out. I’ll tell you why in a bit.
4. Place 4 Pepperoni on the sauce (or use other meat/ingredients of your choice).
5. On top of that place a large spoon full of mozzarella cheese.
6. Pull the edges of the dough up and pinch it together. Try to keep the ingredients in the center of the pizza pocket and not get the sauce up in this pinched part of the dough. The sauce makes the dough slick and keeps it from sealing.
7. Place the pizza pocket on the lightly greased Baking Sheet with the pinched side down.
8. Bake in a 350 degree oven until golden brown, about 20-25 minutes.
The kids each ate two pizza pockets and I must admit, I did too! Add a bit of salad and you have a great meal. Yummy.
Pizza Pocket Variations
I’m sure all of my creative cook friends out there could think of other ingredients to put inside of these pockets instead of pizza ingredients. My idea is to try ham and cheese or even scrambled eggs, cheese and sausage some time. Let me know if you have any winner combos.
What to Serve with Pizza Pockets
Here are some ideas on what to serve with your pizza pockets!
Dipping sauce- like ranch dressing or a flavored mustard.
Salad- like a fresh green salad or caesar salad.
Fries- serve potato or sweet potato fries.
Vegetables- either fresh vegetables (carrots, celery, peppers) or cooked vegetables (carrots, green beans, corn).
How to Store Pizza Pockets
Let the pizza pockets cool and then store them in an air tight container or sealed ziplock bag for up to 3-4 days in the refrigerator. I like storing extras in the freezer for an easy lunch meal. Let the pizza pockets cool and then place them on a parchment paper lined cookie sheet. Flash freeze them like this in the freezer (so they don’t freeze together) then place the pizza pockets in an airtight container. Store for up to 3 months in the freezer.
How to Freeze Homemade Pizza Pockets
Lastly, these freeze well for a few weeks. Let the pizza pockets completely cool off before freezing them in plastic bags. Let them thaw in the refrigerator over-night and then re-heat in a lower temperature oven. I don’t like re-heating them in the microwave because they get tough and kind of soggy.
