Easy chicken and dumplings is the perfect cozy dinner with soft dumplings, savory broth, and tender chicken.

Ingredients  

  • 2 cups Shredded Rotisserie Chicken (about ½ of a chicken)
  • 8 cups Chicken Broth
  • 2 cups Bisquick Mix
  • ½ cup Milk (based on Bisquick Dumplings Recipe)
  • 4-6 Carrots sliced
  • ½ bag Frozen Peas
  • Pepper
  • Garlic Powder

Instructions 

  • Make dumplings following the recipe on the 2 cups Bisquick Mix Box.

  • Bring 8 cups Chicken Broth to a boil and add seasonings to taste (pepper, garlic, etc).

  • Add small to medium-sized spoonfuls of dumplings to the broth.

  • Reduce the heat to medium and cook for 10 minutes. Stirring occasionally.

  • Add 4-6 Carrots, 2 cups Shredded Rotisserie Chicken , and ½ bag Frozen Peas.

  • Return to a boil, then cover and cook 10 minutes more.

  • Remove from heat, and serve.

Notes

Add carrots depending on how you like them cooked. If you like them softer, you might want to add them earlier.
If you like a lot of dumplings, double the recipe on the Bisquick box.
If you have extra soup left, boil the broth again and add more dumplings.

  • Cover Loosely.
  • Heat in 1-minute intervals, stirring between each interval.

  • Thaw overnight in the fridge when possible.
  • Reheat using the stovetop method for best results.
  • Add Extra liquid as needed since freezing thickens everything.
